QUINOA BARK

✨The first time I made this as a “chilli and cheese bark” but the last few times I’ve added broccoli which makes this a nourishing snack or easy meal idea for everyone – that tastes delicious but also ideal for BLW. 

 

🥦 Ingredients:

– 5 broccoli florets 

– 2 cups cooked quinoa 

– 1 cup grated cheddar 

– 2 eggs 

– 2 tsp olive/rapeseed oil

– 2 tsp dried mixed herbs 

– 1 tsp paprika 

– 1 tsp garlic powder 

– 1 tsp baking powder 

 

🥦Method:

Preheat oven to 190C, line a baking tray. Blitz broccoli in a food processor, add all ingredients to a bowl and mix well. Pour mixture onto lined baking tray and flatten evenly, approx 1 cm thickness. Bake for 15mins until slightly golden. Leave aside to cool, cut into slices/strips and enjoy.
