ONE-PAN TERIYAKI CHICKEN AND RICE

✨Anything “One-Pan” is always worth saving – we all have those days where we need to make dinner in under 30 minutes – from the poll in my stories you guys said this would be a good and quick mid-week recipe, so here it is – full of flavour with minimal ingredients and washing up! Sharing my easy dinner – Teriyaki Chicken and Rice.

 

Makes 4 servings

🥘Ingredients:

– 1 tbsp oil

– 4 chicken thigh fillets 

– 1 1/2 cups easy cook long grain rice 

– 200g broccoli florets 

– 500ml chicken stock

Marinade:

– 1 tbsp ginger paste

– 1 tbsp garlic, crushed 

– 2 tbsp honey

– 2 tbsp soy sauce

– 1 tbsp sesame oil

– 1 tbsp oyster sauce

– Black pepper 

– Spring onions, chopped 

– Fresh coriander, chopped 

 

🥘 Method:

Make the marinade by mixing all ingredients together in a bowl. Mix into chicken, cover and leave aside for upto 30 minutes. Gently heat a pan, add the marinated chicken thighs and any remaining marinade followed by rice, stock, broccoli, spring onions. Cover and cook for 20-25 minutes. Uncover, garnish with sesame seeds, more spring onions and fresh coriander.
