CHERRY BAKEWELL PUFFS

Sharing an easy baking recipe for one of my favourite things ☺️ a true sensory explosion when it comes to texture and flavour – frangipane and cherries encased in a crispy puff pastry, what a delight! Convinced? Enjoy these midweek or for any special occasion – I think these would go down so well at Christmas! 

 

Makes 4-6 

 

🍒 Ingredients

– x1 ready-rolled puff pastry 

– 1 egg, beaten

– 3 tbsp Morello/black cherry conserve @lidlgb 

– 120g cherries, pitted and halved (I used frozen, can use fresh)

Frangipane 

– 60g unsalted butter, softened 

– 60g caster sugar/3 tbsp maple syrup 

– 2 eggs

– 1/2 tsp cardamom powder (optional)

– 1 tsp vanilla extract

– 60g ground almonds

– 20g plain flour

 

🍒Method 

Preheat oven to 180C. Unroll pastry and cut out 4 circles, about 10cm in diameter, score a border 1.5cm in from the edge, brush with the beaten egg. Bake for 12-15mins, make frangipane, beat butter and sugar together and add eggs one at a time, then the vanilla. Next add ground almonds and flour, mix well. Take the pastry out of the oven and gently push the middles down to create a pastry shell. Cool and add approx 1.5 tbsp frangipane inside the tart shells, spread evenly. Mix jam and cherries, spoon over the frangipane. Place back in the oven and bake for another 15mins cool for 10mins. Optional: serve with custard, cream or ice cream ✨
