BLUEBERRY MUFFINS

An easy and healthy recipe which can be enjoyed by the whole family, these are great for freezer stash too! 

 

✨Makes 9 Muffins

🫐 Ingredients: 

– 2 cups rolled oats / oat flour for a finer texture 

– 1/2 cup ground almonds 

– 1 tsp baking powder

– 1 tsp baking soda

– 1 tsp cinnamon powder 

– Pinch of salt 

– 3/4 cup Greek yoghurt 

– 3 tbsps smooth peanut butter/almond butter

– 3 tbsps honey/maple syrup 

– 1 tsp vanilla extract 

– 2 handfuls of fresh/frozen blueberries 

 

🫐 Method

Preheat oven at 190c. Combine all dry ingredients and mix in yoghurt, peanut butter and honey. Gently fold in blueberries and place into muffins cases – bake for 15-18mins until risen and golden. Leave to cool and enjoy

❄️ Will keep for 3-4 days in an airtight container, freeze for upto 2 months defrost for few hours at room temperature
