COURGETTE ROSES
Always looking for new ways to present foods and use ingredients in different ways + keeps things fun and also a nice change from pinwheels or squares! Love how simple and impressive these courgette roses are with the surprise “pizza” element in the middle. These are one of our faves so thought I’d share 😉 also a great one for a Christmas appetiser!
Makes 6 roses
🌹 Ingredients
– 1 sheet ready-rolled puff pastry
– 1 courgette, sliced into rounds
– Tomato purée
– Grated cheddar
– Mixed dried herbs
🌹Method
Preheat oven to 180C. Cut/using a mandolin the courgettes into thin slices. Roll out the puff pastry and cut into 8 strips on the shorter side. Add tomato purée, cheese, sprinkle mixed herbs and layer courgette slices as above ⬆️. Roll them up and place them in a muffin tin. Repeat with the remaining strips. Bake the roses in the oven for about 25-30 minutes, let cool slightly.
